Saffron is picked once a year, over about three weeks, and we sell that crop until it runs out and then we stop — we do not buy in from traders to fill the gap. What is on the shelf now is what came out of October–November 2025. When it is gone, it is gone — the October–November 2026 picking has to be dried, sorted and packed before any of it ships.
